Spaghetti with vegetables
If you love pasta and are looking for a first summer dish, fresh and ready in 5 minutes then try our spaghetti with vegetables. They are prepared in a matter of minutes and release all the flavor of summer.
Ingredients for two people
two tablespoons of pesto
Peel the potatoes, wash them and do the same with zucchini and carrots. Now, with a special tool or cut them into very thin strips.
Blanch for 4/5 minutes in salted water, or steam for 3/4 minutes. Alternatively, you can also sauté them in a pan with oil or soy sauce.
Add a tablespoon of pesto and chopped tomatoes.
Our advice is to serve and enjoy the cold dish with the addition of dried fruit to your liking.
Besides, although we used spaghetti, you can use any pasta format from pennette to fusilli.
