Muffin of potatoes

If you want to make a delicious dinner, you can include in the menu our potato muffins! These delicious single portion potato cakes will allow you to surprise any guest! But let’s see how to prepare them…

Ingredients for 12 muffins

  • 275 g of potatoes
  • 250 g flour 00
  • 100 g diced smoked bacon-
  • 60 g grated Parmesan cheese-
  • 190 ml of whole milk
  • 3 medium eggs
  • 8 g of instant yeast for salted preparations
  • 3 sprigs of thyme
  • 2 teaspoons extra virgin olive oil
  • Salt, black pepper and nutmeg.

Preparation

To start, cook the potatoes in a pressure cooker for 30 minutes so as to speed up the time. Meanwhile, heat the oil in a pan for a few minutes and pour the cubes of bacon flavored with thyme.

Then mash the potatoes with the potato masher or a fork and add the pulp to the smoked bacon and eggs, so that they blend evenly.

At this point add milk, grated parmesan and sifted flour.

Carefully mix the mixture: add salt, pepper, flavored with nutmeg and finally the yeast for salty preparations.

For convenience you can transfer the mixture into a sac-à-poche, in order to fill the dough more easily in the molds of the muffins.

Bake in a preheated static oven at 180 a.s. for about 20 minutes (160 a.s. for about 15 minutes if ventilated oven). Once cooked, bake the potato muffins and let them cool before serving!

Vegetarian version

If you want you can also replace the bacon with cubes of zucchini or hot peppers in the pan so as to create a vegetarian and light version!
