Baked potato roll with zucchine and ham

Ingredients for the dough

800 grams of red peel potatoes
1 egg
20 grams of butter
20 grams of parmesan cheese
140 gr (approximately) flour 00
salt q.b.
Ingredients for the filling
3 medium-small courgettes
200 grams of ham cooked in slices
150 grams of provolone (provola or scamorza are good equal)
Extra virgin olive oil q.b.

Preparation of the dough

Boil the potatoes with the skin with slightly salted cold water and cook for about 25-30 minutes (depending on the size).

When they are soft, take them out of the water, peel and mash with the potato masher. Then put the mixture on a pastry board.

Add a pinch of salt, the egg, the butter into small pieces, the grated Parmesan cheese and mix everything. Then combine the sifted flour and begin to knead the time needed to amalgamate the ingredients.

When the dough is well blended form a ball and transfer it on the lightly floured baking paper. Now crush the ball with your hands turning it into a rectangle about 1 cm thick.

Preparation of the filling

To make the stuffing of the baked potato roll, rinse and cut into thin slices the zucchini, brush with a veil of extra virgin olive oil then laid on the grill hot.

Take the slices of cooked ham, grilled zucchini and grated or diced cheese and stuff the dough into it.


With the help of parchment paper begins to roll up to close the dough.

Pluck the roll with a beaten egg and bake it at 185-190 hence C for about 35 minutes.

After the first 30 minutes lower the temperature by about 10 degrees and set the oven to ventilated mode.

Bake the roll of baked potatoes with zucchini and ham, let it cool and then serve cut into slices.

Advice for conservation

The potato roll can be wrapped in food film and stored in the refrigerator for 2-3 days. Before consuming it, just heat it for a few minutes in the oven.
