Courgettes and potatoes au gratin
Courgettes and potatoes are a tasty and crispy side dish, to be done in the oven. A great vegetarian accompaniment to every menu, both meat and fish, and can also be prepared in advance and enjoyed cold.
1 large courgette
4-5 yellow potatoes
2 tablespoons of breadcrumbs
2 tablespoons grated Parmesan cheese
1/2 clove of garlic
extra virgin olive oil
To prepare this recipe you must first clean the vegetables.
Then wash the courgette and slice it thinly with the knife if you want using a mandolin. Peel the potatoes and cut them in the same way as the zucchini.
Now, arrange them alternately, inside a circular ceramic pan brushed with oil. Start at the outer circumference and proceed inward.
In a bowl mix breadcrumbs with parmesan, garlic and marjoram finely chopped, adding salt and pepper.
Finally, roll the vegetables with a drizzle of oil, sprinkle the aromas and bake in the oven already hot at 190 º C. for about 40-45 minutes or until they are au gratin. Bake your zucchini and potato gratin and serve.
