Pantesca salad

Directly from Pantelleria, the recipe we offer today can be understood as a light side dish or quick lunch to take to the office!

Clearly the fresh products, taken directly from the island, stand out the flavors.

Ingredients for 4 people

1 kg of potatoes
1 onion of Tropea
10 tomatoes
25 grams of black olives
1 tablespoon of capers
1 cup of vinegar
salt
extra virgin olive oil
parsley
oregano

Proceeding

First it is necessary to boil and peel the potatoes, then cut them into large pieces and let them cool.

After that, cut the onion and marinate it for half an hour in a small bowl with vinegar.

Then wash and cut into 4 parts the tomatoes, adding them to the potatoes. Add also the onion with desalinated capers and season with oil and salt.

Finally add parsley and oregano.
