Potato Dumplings with Curry

Ingredients for 4 small packages
For the filling
1 courgette
2 carrots
2 medium potatoes
5 grams of salt
4 seeds of coriander
1/2 tablespoon curry and cumin
2 tablespoons of extra virgin olive oil
For the puff pastry
200 grams of 0 flour or wholemeal flour
1/2 glass of extra virgin olive oil
5 grams of salt
cold water
Stuffing
Peel and wash carrots and potatoes.
Wash the courgette and slice all the vegetables to obtain small cubes.
Cut the leek into thin strips. In a pan pour two tablespoons of oil and brown the vegetables for a couple of minutes. Then combine the spices, remembering to press the coriander seeds between your fingers.
Pour a glass of hot water into the pan and cook with the lid for about 15 minutes, stirring occasionally with a wooden spoon, until the vegetables are softened.
Puff pastry
Combine the flour and oil in a bowl, together with a pinch of salt.
Mix and add some cold water little by little.
Start working the ingredients with your hands until you get a very elastic dough. Form the classic ball and let the dough rest for at least 15 minutes, after having greased it with a little oil.
Spread a sheet of pastry rectangular and rather thin with the rolling pin. Form 4 squares with side of about 14-15 cm.
Proceeding
Place in the center of each 3 tablespoons of the stuffing of vegetables that you have prepared. Fold the corners inwards, in the direction of the center of the square, one at a time, and seal the edges with your fingers.
Bake the curry potato dumplings in the oven at 180 º C. for 20-25 minutes, until golden brown.
