
Potato nests with eggs
An inexpensive recipe based on easily available ingredients, which is prepared in just 20 minutes.
In addition to being a hearty single dish, it could be served as an appetizer or, for those who are in favor of starting the day with a tasty savory dish, such as energetic and consistent breakfast.
Ingredients
5 eggs
500 grams of potatoes
50 grams of grated cheese
80 grams of butter
5 cl of cream
salt
black pepper
fresh thyme
Proceeding
Brush, wash and peel the potatoes. Then steam to prevent them from absorbing too much water. After cooking, crush the potatoes. Salt and pepper.
Add a knob of butter, 3 tablespoons of cream, an egg and grated Parmesan.
In a baking sheet coated with parchment paper, distribute the mixture forming many spirals using a sac a poche. Around each draw another round of compound.
Brown in a preheated oven at 180º C for 20 minutes.
Melt the remaining butter in a frying pan, pour the eggs and beat them over low heat for 2 minutes. Add the cream, stirring until a thick cream is formed.
At this point fill the potato nests with a spoonful of egg mixture, add fresh thyme and black pepper and…Wallà! Ready to be enjoyed.
