Potato pie

The potato pie is a traditional recipe that can be prepared with various ingredients; in this version the use of smoked provola makes it a unique dish, complete and fulfilling.

Ingredients

1 kg yellow potatoes
200 grams of sliced smoked provola
2 tablespoons grated Parmesan cheese
breadcrumbs.
chopped dried rosemary
salt
oil
pepper

How do you make a good potato pie?

Peel and slice the potatoes in very thin slices (about 2 mm) and leave them to soak in cold water for 10 minutes. In the meantime, grease a 22 cm hinged mould and sprinkle with breadcrumbs.

Drain the potato slices on a cloth and dry them well. Arrange them radially on the bottom of the mold slightly overlapping them. Season with chopped rosemary, salt and pepper. Add a handful of breadcrumbs, a little oil and slices of provola.

Proceed with another layer of potatoes trying to compact well. In all, there should be 3 or 4 layers (much depends on the size of the mould).

Finally, cover with breadcrumbs, a generous round of oil and grated Parmesan cheese.

Bake in a preheated oven at 180 i. for about 15 minutes until the surface of the cake is golden. Let cool and then serve.

A little advice?

Create endless variations by replacing the cheese from time to time with a different vegetable, for example with chopped onion or perhaps with artichokes or mushrooms. Enjoy your meal!
