Potato pies with salmon and pesto

Ideal for Christmas Eve dinner or New Year’s Eve dinner, as an appetizer or even as a main course. Creamy and tasty, to be made in advance and heat when serving.

Ingredients for 10 cakes

500 grams of potatoes
2 small egg yolks
30 g Parmesan cheese
50 g of Genoese pesto
50 g smoked salmon
100 g of Asiago cheese
30 g of butter
Olive oil as needed.

Boil the potatoes in plenty of salted water, drain and Pelale. Then with the potato masher reduce them into puree.

In a bowl add the egg yolks, the parmesan cheese and the butter; salt according to your taste. Mix mixing all the ingredients.

Olea of aluminum molds from muffins and sprinkle with breadcrumbs. Put on the bottom a little ‘potato dough, level well.

Add to the center a teaspoon of pesto, a little smoked salmon and a cube of asiago. Cover with other potato dough and sprinkle the surface with breadcrumbs.

Bake at 180 i. for 20-30 minutes until they are golden brown using the grill function the last minutes.

Flip them by making a slight pressure on the bottom, directly on the serving plate.


If you want to make them in advance you can decide to bake and then heat them or prepare and bake them when serving.

If you do not have molds from muffin use single-use molds of the form you want.
