Potato roses with bacon

Ingredients for the preparation
250 g bacon stretched
extra virgin olive oil
grated parmigiano reggiano
Peel the potatoes and cut them into very thin discs with a mandolin. Butter two molds of 6 muffins.
He begins to shape the potatoes, imagining to compose the petals of a rose from the center of the flower. Then take a blade of potato and roll it tight on itself.
Wrap it with a little bacon so as to keep it steady. Add two more slices of potatoes and stop everything with another bacon.
Proceed in this way until you get a rose the size of the chosen mold. Sprinkle with a little olive oil, salt, pepper, breadcrumbs and grated parmesan trying to penetrate between the various layers.
Bake in the already hot oven at 180 a.m. for about 40-45 minutes, checking that the potatoes and bacon roses do not become too burnished. Bake, let settle for a few minutes, then servile transferring them in colored pirottini of your choice.
