Stuffed baked potatoes
Stuffed baked potatoes are delicious, everyone likes them and adapt to any occasion. They are easy to prepare that, accompanied by a side of vegetables, constitute a hearty second.
4 medium potatoes, preferably of the same size
100 grams of pillow
150 grams of smoked scamorza
extra virgin olive oil
To make stuffed baked potatoes you must first wash the potatoes very well leaving the skin intact.
Put them in a saucepan with salted water and cook for 20-25 minutes from boiling. Drain and let cool. With a knife cut them in half horizontally and, with the help of a scavino, takes out a good part of the flesh, taking care not to break the edges or the bottom of the potatoes themselves.
Collect the pulp in a bowl and rinse with the tines of a fork. Add the sliced guanciale, the scamorza in cubes and season with oil, salt, pepper and oregano to taste.
Mix to mix well and stuffed with this mixture potatoes. Transfer them on a baking sheet lined with parchment paper, wet them with a little oil and sprinkle a little oregano and a grind of pepper on top.
Bake in the already hot oven at 180 º C. for 15-20 minutes, or until the cheese is melted and on the surface will be formed a slight crust. Bake and serve hot baked potatoes.
